  • For covering paneer add refined flour, salt, corn flour, and water to a vessel, stir well and set aside till in use.

  • Saute the coated paneer cubes till lightly golden, and drain on an absorptive paper. Keep on one side till in use.

  • Heat oil in a pan, add garlic, ginger, celery, and whole red chili. Stir well and fry for some minutes.

  • Add capsicum and onions, and fry till onions are aromatic.

  • Add soy sauce and toss well to coat. Add fresh green and red chilies, and fry for a few seconds.

  • Add sweet & sour sauce, and green chili sauce, stir, and toss well.

  • Add a little water, and sugar and prepare till it melts.

  • Add more water to form corn flour slurry, and cook till the sauce turns thick.

  • Add the sauteed paneer cubes and spring onions, and toss well.

  • Serve quickly.

 

 

3. Mini Samosas

 

These samosas are best eaten at tea time. These samosas are prepared with maida and stuffed with potato filling with light spices, then sauteed.

 

Process

 

  • Take salt, flour, rub oil and oil into the flour. Add water and knead to a dough. Set aside for half an hour.

  • Take filling ingredients in a food processor except for cashews, oil, and raisins. Mix till coarse. Add leftover ingredients and mash coarsely. Keep aside.

  • Divide the dough into equal short balls.

  • Take a ball and roll it into a small chapati-like. Cut in half.

  • Take a half and shape it into a cone shape.

  • With a spoon stuff the filling in and seal the edges.

  • Saute in medium hot oil and saute on medium flame till light golden for around 5 to 8 mins.

  • Drain and cool down mini samosas.
